Mozambican cooking is one of Africa's great crossovers. Piri-piri, brought from the Americas via Portuguese trade routes, defines the grilled chicken and prawns the country is famous for. Matapa — cassava leaves slow-cooked with peanut and coconut — is the everyday classic. Coconut milk, cashew, lime and fresh seafood do most of the work, and Portuguese bread, pastries and coffee culture round it out.
